Egg and Bacon cups

Hi friends. So, this is a super easy recipie I made up sometime last year when we were living in Indiana. Enjoy.
First, place strips of bacon (or turkey bacon) in cupcake pans like this. They act as a liner.
Then beat up some eggs. You need about one egg per cup, but if you're making 12, you can use 10 or 11. If you're adding extra things to your eggs, you'll also need less egg. Once beaten, pour eggs into the bacon lining and add a little salt and pepper; be careful not to pour the eggs any higher than the cup allows, regardless to how high the bacon goes. Some egg might leak to the sides behind he bacon, but that's ok, because the bacon will keep the egg from sticking. Also, this is the time to mix in any cheese, veggies, or whatever else you want to add.
It's advisable to buy a leaner bacon, just so you don't get too much extra grease. And don't forget to put a cookie sheet on hue rack below just in case.
Cook in the oven on 350 until your eggs look like this. I feel like these took about 20 minutes, but it was a year ago, so who knows. Just keep an eye on them, eggs are pretty forgiving.
Once they're done, just take them out of the oven, let them cool for a couple minutes, and then pop them out and stick them on a plate. This batch was served with drop biscuits. Yum yum. Enjoy!
